Homemade chicken pearl barbecue sausage
Tasty homemade red chicken meat sausage baked in the oven. Sausage is well cut into portions and holds its shape, with it you get delicious and beautiful sandwiches. You will need a cotton thread and a thick needle to sew a sheath of chicken skin.

- 550 g chicken;
- 70 g of pearl barley;
- 3 g of caraway seeds;
- 60 g of carrots;
- 110 g of onion;
- 2 tooth. garlic
- 1 egg
- 5 g of paprika;
- 100 g of cherry tomatoes.
A method of preparing homemade sausage from chicken with pearl barley
For the shell of baked home-made sausage, remove a whole piece of skin from the chicken breast. The sausage itself will be prepared from the hips, from which you need to remove the skin and cut out the bones.
Sew the skin from the breast with a cotton thread. We make a long stocking from the skin, the end of which is tied with the same thread. Cut the chicken meat into medium-sized cubes, mix with fried onions and carrots. Fry onions and carrots with slices of finely chopped chicken fat, so the sausage will be more juicy.
Boil pearl barley until half cooked. When the cereal cools down, mix it with minced meat.
Add the egg, half the hot paprika, caraway seeds and salt to the minced meat. Fill the shell with a teaspoon.
We tightly tie a sausage on both ends with a harsh cotton thread so that the filling does not come out during the baking process.
We cut a large onion into thick rings. Lay on the bottom of a greased form. We put the sausage onion seam down, sprinkle with paprika, pour oil, add cherry tomatoes. Onion will serve well in baking sausages, it will burn first if something goes wrong.
Preheat the oven. The temperature is 190 degrees. Bake the sausage for 30 minutes, covering it with foil.
Remove the foil. We bring the sausage to readiness for another 10-15 minutes, watering the resulting juice. If necessary, add a little water so that the sausage does not burn.
We cut the prepared sausage from a chicken with pearl barley after it has completely cooled, and the baked tomatoes will serve as a delicious addition to a sandwich with homemade sausage.
